These single-serving ham and veggie egg white bites are excellent high-protein and low-carb post-op meals. Diced bell peppers and spinach add a pop of color and nutrients. Ham and egg whites provide protein and are the perfect comfort breakfast. Use this bariatric recipe in your meal plan as a tasty way to support portion control.
Swap the ham for the veggies if you need a quick and delicious vegetarian option.
Ingredients
- 1 tbsp olive oil
- 2 cups bell peppers, diced
- 2 cups baby spinach, chopped
- 1 cup mushrooms, diced
- ¼ cup crumbled feta cheese
- 2 garlic cloves, minced
- 1 ½ cups liquid egg whites
- ⅓ cup fully cooked ham, finely chopped
Directions
- Preheat the oven to 350 °F. Grease a non-stick muffin tin with cooking spray.
- Mix the egg whites, bell peppers, mushrooms, spinach, feta, ham, and garlic in a large bowl.
- Scoop ⅓ cup of the mixture into each muffin tin cup.
- Bake for 25 minutes or until the eggs are set. Carefully remove from the hot pan and enjoy!
- Freeze or refrigerate leftovers in an airtight container for convenient egg bites on the go.
