Greek yogurt is a great source of protein that helps create the dough of these yummy cinnamon buns. The frosting packs a protein punch too, thanks to the addition of whey protein powder meal replacement. The end result is a high-protein and guilt-free snack that you can enjoy post-bariatric surgery.*

You won’t even believe that these high-protein cinnamon buns are high in fiber, high in calcium, and totally gluten-free!

Ingredients

  • 1 + ¼ cup almond flour
  • 1 + ¼ cup plain Greek yogurt
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • ¼ cup monk fruit sweetener
  • 1 tbsp olive oil
  • 1 tbsp powdered sugar
  • ½ tsp butter extract
  • 1 tbsp unsweetened almond milk
  • 1 scoop Vanilla High Protein Meal Replacement

     
  • (DOUGH) 1 cup flour, 1 cup plain Greek yogurt, 1 tbsp baking powder
  • (FILLING) ¼ cup monk fruit sweetener, 1 tbsp cinnamon, 1 tbsp olive oil
  • (FROSTING) ¼ cup plain Greek yogurt, 1 scoop Vanilla High Protein Meal Replacement, 1 tbsp powdered sugar, ½ tsp butter extract, 1 tbsp unsweetened almond milk

Directions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, sift together almond flour and baking powder.
  4. Add the yogurt to the flour mixture. Use your hands to knead the dough until fully combined, then shape into a ball.
  5. Lightly flour a surface and use a rolling pin to roll out the dough into a thin rectangular shape.
  6. To make the filling, combine the monk fruit sweetener, olive oil, and cinnamon in a small bowl until a paste forms. Add a bit of water to thin it into a spreading consistency, then brush evenly over the top of the dough.
  7. Slowly roll the dough until it is in a cylinder shape. Slice into 6 even cinnamon buns, the arrange onto the prepared baking sheet.
  8. Bake for 35-40 minutes, or until the edges begin to brown. Meanwhile, prepare the frosting by mixing all ingredients together.
  9. Remove the rolls from the oven and allow them to cool. Once fully cooled, spread the frosting over the top of the cinnamon buns and enjoy!
