Ingredients

  • 8 cups cauliflower florets (about 1 large head of cauliflower)
  • 2 Tbsp. extra-virgin olive oil
  • 1 tsp. dried marjoram (can use dried oregano)
  • ¼ tsp. salt
  • Sprinkle of ground black pepper to taste
  • 2 Tbsp. balsamic vinegar
  • ½ cup shredded parmesan cheese

    Directions

    1. Preheat the oven to 450° F.
    2. In a large bowl, combine cauliflower, olive oil, marjoram (or oregano), salt, and pepper.
    3. Spread the mixture evenly on a baking sheet and roast for about 15 to 20 minutes, or until the cauliflower begins to soften and turns golden brown.
    4. After taking the roasted cauliflower out of the oven, toss with balsamic, sprinkle with parmesan cheese, and return to the oven for an additional 5 to 10 minutes, or until the cheese is melted.
